A good and fast bar mixed drink recipe for Pineapple Island, with pineapple and coconut ice cream.

Ingredients:
2 tbsp pineapple chunks
2 tbsp coconut ice cream

Mixing instructions/directions/method:
Blend with half a glassful of crushed ice until smooth. Pour into a collins glass garnished with a slice of pineapple. Serve with straws.
